Seminar: A Study of Champagne's terroir and grape varieties with peter liem

This tasting and seminar will discuss Champagne’s three main grape varieties - Chardonnay, Pinot Noir, and Pinot Meunier - along with the diversity of terroirs that influence the varieties’ innumerable expressions. Guests will taste two examples of each variety coming from very different terroirs.

This will be a memorable evening of legendary Krug Champagnes paired with cuisine from Chef Daniel Boulud and guest Chef Arnaud Lallement of three Michelin-starred l’Assiette Champenoise in Reims, Champagne. Olivier Krug, the 6th generation to run the house, will join us to present the wines from his family’s esteemed cellars.

Proceeds from this event will go to ment’or, a leading culinary nonprofit organization led by Chefs Daniel Boulud, Thomas Keller and Jérôme Bocuse. Ment'or is devoted to inspiring culinary excellence in young professionals and providing them with unique access to educational opportunities, experiences, and mentorship.

Seminar: A sommelier's perspective WITH Daniel Johnnes

Daniel Johnnes will lead a panel of passionate sommeliers to discuss the role of Champagne in their respective wine programs and offer insights into pairings and service. The panel will feature Patrick Cappiello of Rebelle, Raj Vaidya of DANIEL, Jeff Kellogg of Maialino, and Pascaline Lepeltier of Rouge Tomate. The wines will be paired with a tasting portion of a dish prepared by Chef Daniel Eddy of Rebelle. The intricacies of each pairing will be highlighted and accentuated by tasting the Champagnes alone and then again with the selected dish.

Guests will enjoy a selection of wines from each attending producer for a total of nearly 120 different Champagnes accompanied by a selection of small plates from some of New York City's top restaurants. Winemakers and sommeliers will be on hand to present the wines and offer their insights.

This will be a formal, multi-course, and festive meal. The brigade of chefs led by Daniel Boulud will include Arnaud Lallement of l’Assiette Champenoise, Andy Bennett of Rouge Tomate, Daniel Eddy of Rebelle, and Bryce Shuman of Betony. In addition to enjoying special bottles provided by all attending producers, guests are invited to bring bottles of Champagne from their cellars to share with the room.
