“Time is at the heart of Dom Pérignon’s equation.” So said the house’s longtime Cellar Master Richard Geoffroy, whose exploration of late disgorgement led him to discover that the expression of a vintage of  Dom Pérignon can evolve in stages - reaching specific apogees that Richard decided to call Plénitudes. After around nine years of aging on the lees, a wine reaches its  first Plénitude and is released as Dom Pérignon Vintage. A limited number of bottles are reserved for further evolution in the house’s cellars, and the further metamorphosis will reveal in time a second window of expression called Plénitude 2. The Plénitude program, overseen by Chef de Cave Vincent Chaperon, has revealed remarkable new facets of Dom Pérignon, and we are honored to welcome Amine Ghanem of the house’s winemaking team for this exclusive dinner at Apolonia where he will present a fabulous array of P2 wines going back to 1995, paired with Chef Stephen Gillander’s contemporary Mediterranean cuisine.
