Kick off La Fête du Champagne Chicago with the dynamic winemaker Raphaël Bérêche of Champagne Bérêche & Fils. Raphaël will present a remarkable lineup of wines that showcase  the image of his family’s vineyards in their entirety - through both the singularity of individual terroirs and the harmony that comes from assemblage. The latter finds its ultimate expression in UNE - an extremely rare cuvée representing a counterpoint to modern trends and a return to Champagne’s tradition of blending wines from the best sites to create a wine that is greater than the sum of its parts. The wines will be paired with a tasting menu from brothers Oliver & Nicolas Poilevey at their modern French restaurant Obélix.
