Dominique Moreau created her estate Marie Courtin in 2005 in the village of Polisot in Champagne’s Côte des Bars, naming it after her grandmother whom she describes as a “woman of the earth.” Farming biodynamically, eschewing commercial yeasts in both vin clair and bottle (very rare in Champagne), and exclusively crafting cuvées that express one grape, one parcel, and one vintage, Dominique is behind some of the most intensely expressive and chiseled wines in Champagne today.
Roland Piollot, Dominique’s husband, is a fifth generation winegrower with deep roots in Polisot – his great grandfather was actually one of the leaders of the famous 1911 Aube Revolt that would ensure that the Aube would remain part of Champagne when its place in the appellation was threatened. Extraordinarily passionate about viticulture, Roland makes a variety of single vineyard, single variety cuvées that are pure expressions of the unique terroir of Polisot.
Dominique and Roland have more recently been joined by their daughters Rose and Jeanne. In addition to working in the vineyards and cellar, Rose and her partner, Australia-born Nathan Fallowfield – a highly accomplished chef – have created a hospitality experience at the estate that features the wines of Marie-Courtin and Piollot with sensitive, highly seasonal food pairings from Nathan. The Fête team recently visited them in Polisot and were blown away by the flavors and thought behind each dish and wine.
We are thrilled to welcome Dominique, Rose, and Nathan to recreate this experience in New York – restaurant Mitsuru in the West Village has generously opened their kitchen to Nathan who will be crafting a bespoke tasting menu with his unique culinary perspective to pair with a sensational selection of some of Dominique’s and Roland’s finest creations over the years.
