Rooted in Aÿ, in the heart of Champagne’s legendary Grand Cru region, the Lallier story begins with one family’s philosophy: a sincere respect for nature, and an unwavering curiosity toward the singularity it can bring each year.

Champagne Lallier calls home two locations in iconic Grand Crus region: the first in Aÿ, which houses their aging cellar, and the second in Oger, Côte des Blancs, where the maison’s contemporary production facilities are held. Each location complements the other, marrying age-old techniques with creative innovation.

Dominique Demarville is the cellar master, with an impressive 23-year career in leading cellar positions at several Champagne houses, including becoming the youngest chef de caves at a major maison at the age of 31. Revered for his precise contemporary vision of blending, perfectly aligned to the authentic, accessible and sophisticated Lallier style, his objective is to highlight the wines’ complex and generous character, while crafting world-class cuvées and ushering the house into a more global eco-responsible approach. He inherited the mantle of cellar master and general manager at Lallier in January 2021.

The Champagnes are handcrafted with precision and an open-mind, separating base wines in small-volume stainless-steel tanks and 228L wooden barrels to unveil diverse and expressive flavours. They ferment with homemade yeasts, and carefully leverage malolactic fermentation to retain freshness while enhancing the personality of the end product. Lallier tends to favor the base wines over the reserve wines and likes to age the wines for longer on the lees to help create their signature intense and deep texture. Finally, they go low on dosage to respect the intrinsic qualities of each blend.
